There's a nice trail in Missouri, spans west from just outside st Louis. Almost to the Kansas border. Katy or kady trail. Rode it a few years ago. Plenty of camp sites even a few free bunk houses. An small towns consistently for resupply

Katy Trail originates north of STL on the Illinois side and all the way through to Kansas City KS. I've known people to walk it in entirety....
