Regarding hitching, I would HIGHLY suggest checking out Hitchwiki.org for info. Paris to Amsterdam can be done in a [long] day; A'dam to hamburg is around 8 hours, and to copenhagen you can hitch the road, or hitch the ferry from Rostock, Germany. The return trip sounds somewhat reasonable...
