There was a bar I went to a few times in northern Thailand that was sort of like this. They had a full size bus that they made food in and a little trailer that they had made into the bar. The weekly Couchsurfing meet-ups took place there and I went there a couple times with people from the film festival I was working with. There was a German backpacker working as the bartender while I was there so I guess they would hire travelers passing through to work there.
