Hate to be a naysayer, but unless ya have extensive experience I'd take a small trip, 100 miles of so and go from there. Thats a looooong trip youre planning.
Logistics are hell on canoe trips. Restocks are rarely convenient. Dog sounds like a bad idea. Alot of rafting/canoeing deaths this year in CO, everythings swelled up from a big winter.
Spend a couple days out and then go back to planning.
But that's just my opinion, and I've never planned a canoe trip of that length. If your successful post your knowledge so we can copy it.
It can be done but there will be many, many obstacles to overcome, more than stp can tell you. I did about 50 miles on what i expected to be a very easy portion of the colorado river last march in a kayak and had to turn around halfway through because the winds were too intense to make it any further. And that was in a kayak; a canoe would be more difficult.
